The origins of this cheese are fascinating. The cheese was first made in 1850 a group of monks built an Abbey in Chimay, Belgium and since then have been making cheese and delicious beers. All their products are made by local produce and are made along traditional methods. The Chimay Grand Cru cheese is a semi-hard pressed cheese, with a creamy texture and pronounced flavours of nuts, hops and malt. These unique flavours are due to the cheese being washed in Chimay beer.
Ingredients: Fat 48+, pasteurized whole cow’s milk, rennet
Suggested Pairing: Chimay Trappist beer would be the obvious choice. Otherwise, a Bordeaux Blend would go very nicely.
